Today’s recipe is a super soft fluffy spongy cake. You always love to eat in snake and especially with tea. So this recipe is one of the classic soft fluffy sponge cakes. so let us start the recipe.
INGREDIENTS:
2 cups of flour
6 room-temperature eggs
2 and 1/2 cups o sugar
1 tbsp of vanilla essence
one tsp of white vinegar
1 tsp of cream of Tatar
1/4 cup of milk
1 cup of oil
1 cup of homemade caramel syrup
PREPARATION:
We will start by mixing the dry ingredients into the bowl. Take a bowl and add 2 cups of flour, 1 tbsp of baking powder, and 1 tsp of salt now mix it well. Set it aside until we prepare the following things. Prepare the egg mixture we need beaten eggs, sugar, and vanilla. Bring a bowl and add the 6 eggs to your mixing bowl, and add 1 tsp of cream of Tatar. Cream of Tatar speeds up the creation of foam and helps stabilize the structure of whipped eggs. You can substitute it with 1 tsp white vinegar and baking powder also can be used to replace the cream of Tatar. Add one tbsp of vanilla essence and beat it well. Until the eggs become foamy texture beat them for 5 to 6 minutes it depending on your beater or beater speed.
Now add the sugar and it is important to add the sugar gradually while mixing. Beat eggs and sugar foam for 8 10 minutes until it becomes thick and fluffy. Add 2 and 1/2 cups of sugar to the egg mixture once you add sugar and mix it gradually. Now after beating the eggs and sugar you will move the mixture and continue mixing with the manual one. Then you have to mix gently and solely to preserve the aeration built by whipping eggs and make sure not to mix or you will deflate the batter.
Add 1 cup of oil to the egg mixture and mix it with the wicker. Mix it gradually and fold carefully once the oil mix completely. Then time to add the dry mixer into it. Now add the flour mixture into small portions and gradually mix. Just fold enough to barely incorporate the flour and repeat the same steps. Once your dry mixer has mixed well add 1/4 cup of milk and also mix it gradually and also add into small portions. Time to add the mixture to the baking pan. Bring the baking pan, cote it to the oil, and place the baking paper into the pan because it helps you easily remove the cake.
Now you will pour the batter into the prepared baking pan and tap 2 to 3 times on the counter surface. Because it helps to remove the bubble better or remove the empty surface and the batter becomes equal and helps to cook properly. Time to bake it for about 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Because the time limit depends on the temperature of your oven. It usually bakes at 160 c. Put it into the oven and wait for 40 minutes after that check your cake. If your toothpick is inserted into the cake. If it becomes clear then your soft fluffy sponge cake is ready if not then bake it for 5 minutes. When your cake is done then take it from the oven and wait for it until it becomes room temperature.
Insert the cake into the plate and allow it to cool before using it or become to room temperature. Now you will decorate it with different things which you like the most or are easily available in your kitchen. You can also serve it simply. But now we will decorate it with homemade caramel syrup and also some kinds of walnuts. Pure the caramel syrup into the cake and garnish with a chopped nut which is almond, pastitsio, and walnuts.
