Homemade Shazwan Chicken Frankie roll

Today’s recipe is Sachwan Chicken Frankie roll. If you guys love rolls then this recipe is especially for you. So lets us prepare the recipe.


12 & 13 Dry Kashmiri red chilies

6-7 garlic cloves

half inch ginger

2 cups of oil

two tbsp of salt

1 & 1/2 tbsp of crushed coriander

One & a half tbsp of cumin seeds

2-3 green cardamon

2 cloves

1 tbsp of sugar

2 to 3 tbsp of tomato ketchup

18-20 black peppercorns

1 full tbsp of degi chili powder,

A pinch of asafoetida

1 tbsp of dry mango powder

half tbsp of garam masala

1 tbsp of turmeric powder

One cup of refined flour

1 tbsp of vinegar

one large onion

1 large capsicum

half a bunch of coriander leaves

3-4 green chilies

2 to 3 medium boil potatoes

1 chicken breast


When you guys make Frankie rolls at home then you need to follow 3 steps which are preparing the bread, the other one is spread which is the sauce and the last one is the filling. Let us start to prepare these steps.

Sauteing Shazwan Chutney;

We need 12 to 13 dry Kashmiri red chilies and soaked them overnight at room temperature if not then take a boiling and soaked it for 1 or 1/2 an hour and also remove the seeds. After that take a bowl to prepare a paste we need 6 to 7 garlic cloves, overnight soaked Kashmiri red chili, 2 to 3 tbsp of oil, and half an inch of ginger peel and sliced it. Dig into the blender and make a fine paste.

Once you make the nice paste then you need a pan and add 4 to 5 tbsp of oil. Add your prepared chili paste and saute it on medium to low flame. Make sure to keep staring and do not stop your spatula. Now add 1 tbsp of sugar, and add 2 to 3 tbsp of tomato sauce. Stir it for 2 minutes and after that put it into the bowl and keep it aside. Your shazwan chuteny is ready.

Prep Franki Masala;

We need a saucepan and add one tbsp of salt, 1 and a half tbsp of crushed coriander, 1 and a half tbsp of cumin seeds, 2 to 3 green cardamon, 2 cloves, and 18 to 20 black peppercorns. Saute it for 2 minutes on low-medium heat and after that add one tbsp of turmeric powder. Saute it until the dry spices reduce to a nice fragrant. Once it reduces fragrant or lightly changes color then your dry spices are ready to make sure not to burn your spices.

Because when we saute spices then most people burn the spice’s black color. Especially turmeric powder so be careful about your spices once the raw smell of turmeric is removed. Then add 1 full tbsp of degi chili powder, A pinch of asafoetida, 1 tbsp of dry mango powder, and half tbsp of garam masala. Saute it for a minute and remove it from the flame and put it into the small bowl and keep it aside. Until it becomes to room temperature. After that make it a fine powder and sprinkle it on the Franki rolls.

Make dough;

Take a bowl to make dough add one cup of refined flour add a half tsp of salt, and add 1/2 tsp of vinegar or 1 tbsp of curd. Mix it and add water as required to make a nice dough and make sure your dough is not too much thick or not too runny. Afterward, add 1 tsp of oil and knead the dough again. Now make a boll and rest it for 30 to 35 minutes to make set your dough. Cover with a wet cloth to make moisture in your dough.

Bring a bough and make a small bowl to make a round surface thin roti or bread and place it in the pan and cooked it. Once you roti roasted for 1 side twist it to the other side and roast it for 2 minutes add 1 tbsp of oil and roast it

Chopped veggies;

Bring a large size onion and peel it and sliced it and 1 large size capsicum and sliced it. Take 2 to 3 green chilies and finely chopped them you can use less spicy chilies. 2 to 3 medium-boiled potatoes peel it and cut them into small cubes and half a bunch of coriander leaves and chopped them.

Make Chicken Schezwan;

Bring 1 chicken breast washed it and cut it into strips take a pan to add 2 tbsp of Schezwan Chutney and add your veggies. Which is chopped onions, sliced capsicums, and potatoes, and stir it for 2 minutes. After that add chopped coriander and sliced green chilies and cook it for minutes to make the veggies soft. Once your veggies become soft add 1 liter of water and wait for the to boil. Add a little bit of salt and add chicken strips and cooked it for 5 minutes. Once your chicken is cooked completely. Then take a small bowl and add 1 tbsp of cornstarch and 1 tbsp of water mix it and add to the chicken shazwan. Make your shazwan sauce thick then add 1 tbsp of chili oil. Your Chicken Schezwan sauce is ready.


Grab a frying pan and add 1 tbsp of oil. Bring your prepared roasted roti and roast it properly for both sides. Transfer to the plate and spread schezwan chutney. Add prepared Chicken Schezwan filling into the center of the roasted roti and sprinkle processed cheese grated, add chopped coriander leaves, and sprinkle half tsp of prepared Frankie masala. Carefully roll the roasted roti and your shazwan Chicken franki roll is ready. Put into the serving plate and add complementary mint chutney.
